Tutorial: Dandelion honey. Yum yum!

Now (end of April) is the best teim to make this delicious dandilion honey. If yu're a bear, human, small or big, I'm sure yu will love it!


Yu will need:
  • 250-400 dandelion heads (more heads=stronger flavour)
  • 2 kg of caster shugar
  • 2 litres water
  • 2 lemons
  • big saucepan
  • clean jars

Step 1: Pick dandelion heads during the dey while in full bloom. Some recipes say to use 250 dandelion heads, some say 400. I used 400 (yu wouldn't believe how many buckets I had to fill!)



Step2: Put all heads in a big saucepan and boil together with 2 litres of water and 2 thickly sliced lemons for about 15-20 minutes.

It doesn't look very attractive but it smells lovely!

Step 3: Remove from heat, cover with lid and let it brew for 24 hours. Meanwhile yu can prepare yur jars.


Step 4: Next dey filter blosom liquid through a strainer or clean kitchen cloth.


Step 5: Pour filtered liquid to a big saucepan, add 2kg of shugar and stir well.

Step 6: Let simmer on low heat for 3-5 hours. (sometimes it takes longer, sometimes less teim. I done 3.5 hrs and it's quite still runny. But I'm not patient).



Step 7:
Pour to clean jars while still hot.


Step 8: Enjoy!

    There are few dandelions here in S.W. Florida. Too hot, Daddy says.
